We stayed in the Galina Hotel specifically to see the falconry. We initially tried to book the 'Eagle Experience' however as we were there midweek in June this was not possible (the trains don't run midweek in this month). Instead we booked the Goshawk Walk. This was far, far better!. We arrived just in time to see the daily talk...

Galina falconry (Falknerei) is an exciting experience. Never again will you get as close to eagles, falcons, hawks and eagle-owls.
Every day at 3 p.m. (except Mondays) in Malbun, a professional falconer and his birds of prey put on a unique flight show. The majestic raptors and the swift falcons spiral upward into the sky before plunging just above the visitors' heads back onto the hand of the falconer. With speeds of up to 150 km/h (95 mph). Breathtakingly beautiful.
