Visiting Historical sites may not be too interesting for some people. In our group, we had one who was not very keen, but in Istanbul, that was the reason to go. So, we planned our visit in such way, that every one of us enjoy. Historical site visit, then go for traditional markets, after that city tour by bus. Following day a river/sea cruise, mountain climbing, visiting villages. Going out in day and also night time to explore the culture and traditions. You need good strong foot to walk around, so once you get tired, you take boat ride or tourist bus trip and give the leg some rest. There are millions of restaurants to choose from everywhere.
I can propose what to see in Istanbul in 5 days. Visit all the historical sites which are in the same area like Sultanahmet (Blue Mosque), Haggia Sophia, Cistern, Topkapi Palace. After these spend whole day in Grand Bazar and Spice Market. It is amazing, how one full day can be easily passed in these markets. Another day take the Bosphorus cruise for whole day. Enjoy the small village, hike up the hill and visit a castle and enjoy the view from top. Enjoy all the restaurants. One day give yourself a treat with Turkish bath and spa and relax next to the sea and relaxingly walk. Take a tour with a double decker tourist bus and see the city and interesting places. You can get down and see historical sites and hop in to the next bus. Taking boats are buses are also a good way to avoid very sunny or rainy weather and wasting time.
