For our annual spring break trip to France, this year I took my eighth graders to Paris and then to Arles. The girls and I stayed at Erick Vedel's bed and breakfast and the boys stayed at a hotel close by. The boys were jealous because they said it always smelled good at our place! Chef Vedel gave a lunch time cooking lesson to my students. They prepared Pissaladière (a tomato and onion tart), Poulet Apicius (an ancient Roman recipe for chicken) and individual chocolate hazelnut tartes. The work was very hands on for my students- some had never sliced an onion or tomato before this. Chef Vedel is very patient and loves his work. The kitchen is a very welcoming place. The bedrooms are beautiful, also the work of Chef Vedel. Arles is a wonderful place for students because they can be very independent. American students aren't accustomed to the freedom they can have in a French town. Sadly, this concept is found mostly in malls in the US now. We had a wonderful stay! more

Daily breakfasts were delicious with fresh baked goods brought in by our hosts, eggs prepared to order, orange juice freshly squeezed and a fruit bowl available for our use throughout the day.Madeliene and Erick Vedel live on site, their two young sons are often in evidence and delightful additions to our adventures. While the dining room is a good gathering spot, this establishment does not provide a sitting room with comfy chairs for reading or conversation. That is the only drawback I found. This situation is... more
