Kumbhalgarg Fort is fantastic but the hotels are expensive. This is a reasonable budget choice that doesn't seem to have yet hit the guide books. It's clean, close to the bus stop to Udaipur (which you should consider taking as it's so much more entertaining - let alone cheaper - than the sterile taxi drive!) and has a good restaurant within. You do need however to take a taxi drive from here to the fort (conceivably it is possible to walk back as it's downhill!). more
