On our recent visit to Cimarron, NM, we were able to eat a meal at Colfax Tavern "Cold Beer" during spaghetti night. This small tavern is not a tourist trap by any means, and we felt very welcomed. The restaurant building is very well maintained. The spaghetti and garlic bread was great and Roger, the proprietor, was an excellent host.... more

No trip to Cimarron, NM, would be complete without a stop at the Colfax Tavern, affectionately known to locals as the "Cold Beer" due to the large sign painted on the side of the building.
