Hi there, the Chart House in Dingle is not exactly "bistro style" but it serves very good food (http://www.charthousedingle.com/).
In Kinsale I like the White House (http://www.kinsale.ie/whithous.htm), I mean the pub part rather than the proper restaurant. But there are so many good places to choose from!
I am sure you will get lots of recommendations for all the towns you're going to visit.

The Chart House was the second best restaurant we ate at in Ireland (with Vaughan's Anchor Inn in Liscannor the best).

the steakhouse in killarney if it is still open. last time i was there was over 3 years ago but it was goooooooooood.
my new find herein dublin is la peniche.its a barge on the canal opposite the mespil hotel near baggot street.i was there 2 nights ago and i have to say it was brillant .it even went up and down the canal. try http://www.menupages.ie or http://www.lapeniche.ie .
