you will find most of us will always suggest that you stay clear of the day trips

in jan the prices come right down and you will be able to stay there for a week for the price you pay for a day in dec - have a look at inghams and crystalski for week long stays

you will also be able to get shorter breaks with companies such as thompsons, cosmos, cantebury etc

as for santa, yes, hes still about

Santa is at least in the Santa's Resort Kakslauttanen and Rovaniemi every day of the year even if you go on a DIY trip (in Levi/Ylläs area the Santa might not be that easily available outside of the main season in December). If you decide to buy a "Santa" package trip the tour operator has made sure that Santa and his elves are not too engaged in making presents for next Christmas while you're there ;-) .
