Last year my daughter and I did the same. We enjoyed Figmuller 1 - there is 1 and 2 - home of the original Wienner Schnitzel. Don't be tempted to order anything extra (as we did and left!) because they are enormous, pizza size and servedwith potato sald is more than adaquate.
We went to the Gulashmuseum and had good food but found the restaurant itself a bit dissappointing. My mushroom goulash was imaginatively served in a hanging contraption with a light underneath to keep warm. A restaurant called Plachutte was family run and had a good selection of traditional dishes and seemed to enjoy telling us all about them.
An interesting couple of hours was spent having a strudel making demonstration - arranged by the hotel receptionist so can't remeber where. This was not with filo pastry but proper strudel pastry which was pulled and stretched beyond belief and we finshed off with a generous slice and drink. There is a beautiful foodie lovers market to visit - the hotel will direct you and advise times.
The coffee houses are to die for. I think it was a Dremel you could watch through glass and see all the staff making the cakes and pastries (about 6 of them). Go to Hotel Sacha for afternoon tea and have the Sachatorte but you can have this in other places - it is just a beautiful environment. I could go on and on.
Try to see the Spanish Riding School in action - you have to book tickets before you go and it is expensive but worth every penny - this is Sunday morning and before going to this we went to church and heard the Vienna Boys Choir sing. Travel on the ringstatt trams, there is one that takes you all round the city and you can get on and off wherever you want to explore - just check it is not a bank holiday when you go as a lot of things close down then - when we went.
Bye the way, try and loose a stone before you go then you won't feel so guilty eating the amazing pastries. Feel like another visit coming on now!!
Ditto Figlmuller. I returned there after many years and it was still wonderful. Touristy, but found out Figlmuller will put the "regulars" upstairs if possible. Ditto on ordering only ONE schnitzel for two people. It is the best schnitzel ever -- paper thin. The eierschwammel dishes ere good too. Best of all, it's not a splurge, yet definitely worth a trip.
Ditto also to Demel. For a more relaxing atmosphere and newspaper reading, we fell in love with Cafe Central. Pianist there (after 4, I think).
Sure, don't worry about losing weight before you go to Vienna - you'll work off any excess capering round the sights! I look like a grizzly bear and eat like one too but I always lose weight in Vienna. Probably because I will march any distance to secure myself that all-important cake or icecream ... For cafes, try Diglas (my favourite) on the Wollzeile near Stephansdom, and a smaller branch on the Fleischmarkt, near Schwedenplatz. Not exactly non-smoker friendly but with Dobostorte that good, who cares? Cafe Oberlaa on the Neuermarkt is also a favourite - you can get everything here - coffee, cake, snacks, and light hot meals (non-smoking room upstairs, for those who need it). A real ladies-who-lunch hang-out so good for the female of the species! For more manly fare, I like Hopferl on the Naglergasse, near Julius Meinls, for hearty pub-style food (though you may not get past Meinls, the great food emporium which is a sight in itself).
And after all that lot, you will have difficulty squeezing in a gourmet meal in the evenings ...
Rol, now feeling hungry...
Don't forget Cafe Weimar Rol. At your suggestion we tried it for lunch after picking up our Volksoper tickets, and then went back later in the week for dinner. For other meals,some of our favorites are Cafe Mozart(excellent fried chicken), Cafe Central (good lunch, unforgettable decor) Cafe Griensteidl (excellent goulash).
The only place I hesitate to recommend is the Plachutta on Wollzeile. While the food was good, and the presentation of tafelspitz memorable, they really took advantage of us. Overcharged us, and brought us things we didn't ask for which we were too polite to contest.
Saving the best for last ladies. The Dessert and Coffee Ritual. You will never forget this part of your Vienna trip. I would leave CA in a minute and live in Vienna just for this. There are not enough superlatives to describe the elegance of the presentation and the exquisite perfection of taste and texture that is Vienna dessert. The good news is that after you return from vacation up one dress size, you will shed the weight easily. Every sweet confection at home will pale in comparison, making it easy to resist.
We are returning to Vienna for the second time in a year and I could pretend that we are returning for the music. Really, it is probably the cake and strudel. Makes this fat lady sing.

Figmuller woud get our vote as well. Not only is the food good but the waiters were quite amusing... We shared a table with a German couple and had a very entertaining evening.
