Sydney offers a diverse range of pubs from upmarket trendy establishments to old traditional hotels where good tucker and entertainment can be found. All Aussies love going to the pub and having a beer or vino with their mates, It is here that you will experience the true blue Aussie culture. Australian Youth Hotel in Glebe. Does a great Beef & Guinness Pie & Sunday roast in winter.
Welcome Hotel in Balmain. Also does a Beef & Guinness Pie, bangers & mash etc.
Lord Dudley in Woollahra. Roasts, steaks (with horseradish cream). Lunch is best.
Hero of Waterloo in The Rocks.

But many pubs in the areas you mentioned will do excellent pub food. It's not as cheap as it used to be, in fact the days of cheap pub food seem to be largely over; the 'gastro-pub' seems to have taken over. You'll notice there's more seafood, Asian influences and lighter style food in pubs in Sydney than the UK, especially in summer.
Also, The Watson's Bay Hotel has a great beer garden with views out into the harbour, and pretty good fish & chips, seafood, salads, burgers, steaks etc.
Check to see if the Lord Nelson still has its Monday night special for meat pies. Two years ago they were a very filling and yummy meal for only $5 AUD-- and oh the peas were a fancy touch. Given how poorly the US dollar is doing against the Australian dollar (then and now), it will be a welcome relief to your wallet.
We're going back to Australia next summer and if we visit Sydney this time around, we'll visit the Lord Nelson (my third time in three visits).
Thanks so much for your great input. We'll be in Sydney for two nights in February & it looks like we'll have some terrific pubs to choose from. Is there any one in particular you'd recommend for entertainment on a Sunday or Monday night?
