If you complete more info on your profile or mention what you like we can recommend for YOUR tastes/dining style. There are several more worthwhile restaurants in Foley, Orange Beach, Bon Secour and Magnolia Springs for example that are worth a try.
Based on the restaurants you mentioned it seems like you like "family style" restaurants. You might enjoy Lamberts "Home of the Throwed Rolls" in Foley for example.
Like nostalgia? Try Stacey's Rexall Drugs in Foley for the best ice cream sundaes/ shakes served up in old-fashioned glass dishes.
There is another drugstore that has a soda fountain in historic downtown Gulf Shores but I'm blanking out on the name. I've enjoyed soda fountain drinks from there. They used to sell sandwiches there but I haven't been in a year.
If you like Doc's you might also enjoy King Neptunes in Gulf Shores (be SURE to get the fried cheesecake).
Wolf Bay Lodge in Orange Beach is a gorgeous waterfront setting. It is especially nice to eat outdoors near sunset. You'll enjoy the salad bar with homemade goodies. If Shipps Island Grille has musicians you can hear them perform while eating outdoors.
The Coffee Shop in Foley was written up in RoadFood book (famous). It is a true "diner" experience where locals eat (smaller than Ducks ... and older/quainter). It's worth it just to take pics of the murals on the building and say you went. ha.
