Positano, Italy is such a wonderful place I returned in July 2012 for my 8th annual visit. Buca di Bacco continues to be one of the best restaurants to eat at in all of Positano!. They have been consistently great over the years. In 2010 they started giving hour cooking classes, which I have taken each year because I always learn something new! This year we learned the secrets to making a quick Eggplant Parmigiana, Pasta Carbonara, and Potato Croquettes. It was worth the cost of the class just to learn how to make a light, delicate and delicious Eggplant Parmigiana in about an hour! It was so much better than the heavier style we are accustomed to in the United States, no eggplant skin, no breadcrumbs, no frying. The Chef, Andrea Ruggero, explained in great detail each step, while and an another staff member translated in English along the way. Of course we had the opportunity to dine with the fruits of our labor with a nice glass of wine! In addition, each guest was given a miniature cookbook with classic Italian recipes from the restaurant, along with other useful items to take home. I highly recommend dining at Ristorante Buca di Bacco and taking their Cooking Class for an afternoon. You will have learned valuable cooking skills and eaten well!!
