My boyfriend and I stayed at the Hotel Caravel for one week and we loved it. Very friendly and helpfull staff, good sized swimming pool and jacuzzi (nice to come back to when you've spent a hot day looking around Pompeii!) as well as a very nice roof terrace, and big, clean, air-conditioned rooms with balconies. I'd recommend paying a bit extra for a superior room because the standard rooms are very small and have smaller balconies. Also ask for a room on the 3rd or 4th floor and some have great views of Vesuvius. The breakfast is excellent - everything from cereals and fruit to bacon and eggs and even profitaroles some days!! It is a 20 minute walk into Sorrento (to the Piazza Tasso) or 15 minutes to the train station (we got the train to Pompeii and Herulaneum - very cheap and easy to do. The trains always on time and it's about 35 minutes to Pompeii and 55 to Herculaneum) but the walk is flat and well lit so not that bad really. The hotel does do a mini-bus run into the centre 5 times a day which is handy too.
We both loved Sorrento and found some really good resteraunts (in particular one called Photo which is excellent and a bit different - www.photosorrento.com) If you're planning to visit Pompeii then allow yourself a whole day and don't try to do everything because it's impossible - you have to be a bit selective. Personally we would highly recommend Herculaneum as it's slightly smaller and less ruinous, the buildings are more whole and you can really imagine what it was like at the time. We paid about 6 euros for an audio tour in both places and it was very comprehensive and interesting. If you're flying into Naples then there's a bus called the Curreri which runs from outside arrivals and takes you straight to Sorrento (takes about an hour and a half) for 8 euros each - easier than getting a train and cheaper than a taxi (75 euros apparently!)
Overall we'd highly recommend the Hotel Caravel as a good base to explore the area.
