We ate crepes almost every lunchtime on our recent holiday in Brittany, partly because we were on a tight budget because of the exchange rate. Each time, I ordered a simple fromage-tomates, and so I was able to make exact comparisons. The one I had at the Creperie de Benodet was light as a feather, crisp, melt-in-the-mouth. And the cooked tomatoes were flavoured with basil and other herbs, absolutely delicious and simple, like the best of French cooking. (The second best was one in Pont l'Abbé.)
