I'm not sure I would have discovered Aria, or gone out of our way, had we not stayed at the Fairmont. That being said, we had a really great meal there in a lovely dining room with attentive service. It's fairly expensive, but the dinner was delicious with richly layered flavors and depth on the plate. The influences were French and Asian from Chef Beverly Kim, who was a local girl made good on "Top Chef.'
