My boyfriend surprised me by taking me to the 3 chimneys restaurant whilst we were staying in Skye, the place was beautiful, staff were so friendly and the food was so freshly made to order it was brilliant - I'm a fussy eater but they made food I would never normally try taste world class - I'm trying to persuade my boyfriend to take me back - he also loved it :)

I have eaten in top restaurants all over the world and am not afraid to pay top dollar so long as I get good food and service. A friend had told us about Three Chimneys and so we were over from New Zealand touring Scotland and made a point of coming to Skye. We stayed in several places in the Highlands including the Glenmoriston Town House in Inverness. Perhaps our expectatons had been set too high by the great food and accommodation we had previously. We received a very lacklustre greeting when we arrived and had to ask for our coats to be taken. It was as though they were trying to appear to be very highbrow. Although the place wasnt busy, we were kept waiting around whilst the staff checked that we had booked. We were dressed quite smartly but we felt like we were being looked down on. Our meal at The Three Chimneys was a real let down. Our food server was very young and she really had no idea on how to advise us which wine would be good with our choice of food. I asked what New World wines she recommended and I had to repeat the question several times until she got my drift. I'm not a wine snob but I do expect the staff to have some idea. She then was all confused about which knives and forks were needed for our order. We felt quite awkward by the poor service. The food itself was average and we were actually glad to get the meal over and leave. There was really no ambience whatsoever which is such a shame as the surrounding area is gorgeous. I felt the place to be very cramped and dingy and somehow lacking. I would recommend Skye to anyone. But spend your money on somewhere more professional.

If all this truly happened during your visit to The Three Chimneys then I apologise profusely. In October my Restaurant Manager broke her ankle and has had her leg in plaster until recently. The only possible young, female member of staff who could have appeared to be nervous and unprofessional, was probably the lovely young person who started work with us at that time during her school vacation, to help us out as another pair of hands. She now continues to work here on one night each week and is wonderful. As well as being very popular with the customers she is learning her role extremely well and we hope that she will be a major player in our team over next summer before she goes to college. We always encourage local young people to work here and they always prove to be an excellent addition to our team during the busiest months of the year. All of our team is Scottish and approach their work with a huge measure of professional enthusiasm. My Head Chef and his do team do so too, so I am disappointed that you advise readers to find somewhere more professional than ourselves.

We have a fulltime Sommelier working at The Three Chimneys and also, the leading members of our Restaurant team have all attended professional training courses run in the UK by the Wine and Spirits Educational Trust. You do not mention in your review if anyone other than the nervous young lady attended your table on the evening you were here, although there would have been a minimum of 6 people working that evening, plus another providing the Lounge drinks service in The House Over-By. However, I am confident that other staff would have served you too and alos, dealt with your wine order.

The Three Chimneys has welcomed customers from all over the world for 25 years. Being in such a remote place we have always made a point of making people feel very welcome here and aim to look after them at all times. I am not above being criticised for not providing a perfect experience to everyone every time, but to do otherwise would never be our outright intention. We aim to welcome everyone through the door and offer to take their coats immediately. We have a list of guests reserved for that evening on the desk at the entrance. There should have been no delay in acknowledging your reservation upon your arrival,unless there was a reason - perhaps you booked the table under a different name? I have no way of knowing. We truly aim to please and never go out of our way to make people feel awkward or unwelcome and if this was the case when you arrived I can only apologise. Our customers arrive for lunch and dinner in all forms of dress. We are not snobbish about how people look and have no "jacket and tie" dress code. Everyone is on holiday when they come here. We rarely have "business expense account" customers. Our customers arrive off yachts in their waterproofs, off the hills in their boots and sometimes get changed in the ladies and put on their makeup! Nothing fazes us, I can assure you and all other readers.

Please be assured that I will discuss your criticisms with my restaurant and kitchen team, as I always do. Your views about the food are purely personal and are not the general opinion of those who lovel to eat here, nor those of the most professional of our critics.

I was in Skye on business and wanted to check out all the hype. I had seen Shirley's cook book and it looked like they knew how to put a meal together. Both my guest and I were so disappointed. The pictures in the book looked great but in reality the food was really nothing special. The service was a bit ameturish and on the whole the place had no atmosphere. Even if it wasn't overpriced (which it certainly is) I don't think it's worth it. The place could do with a revamp. I understand it's been under the same management for a long time and it needs to be refreshed.

Whilst in Skye we stayed at the Viewfield House Hotel (#3 on Tripadvisor) and the ambience and warmth and professionalism of service was beyond compare.

The Three Chimneys has passed its sell by date and I am surprised at some of the positive reviews. Perhaps I caught it on a very bad night.

Dear MikeMarsden,

In response to your review, my book was first published in 2002. The photographs are in-keeping with the style of dishes cooked and served at The Three Chimneys between the year 2001 and 2002. As you would expect, our style has moved on since then and is continually doing so. The current Head Chef has been in situ for the past 4 years. I am extremely pleased to inform you that during his time, the restaurant has gained many more awards and plaudits, including a fantastic write-up by the revered food critic, Frank Bruni of the New York Times. If you feel that my business is "over-hyped" perhaps you would like to tackle those who are responsible for writing the hype? We do not write the reviews in the food guides, the newspapers and magazines, nor do we write the reviews on this website.

Since we bought the Three Chimneys 25 years ago, I can also asure you that many changes and upgrades have been made to the premises, the most recent being in June 2008. This is also something that we work at continuously. We are not typical of a city restaurant with a glossy interior. However, we have no intention of making any dramatic changes to the bare stone walls and other purposely natural features of the building which people seem to enjoy very much as it is in-keeping with our location. As for lack of atmosphere and amateurish service, this is your personal opinion and not typical of the thousands of customers who pass through our doors each year.

I am sure that many chefs who have written cookery books are conscious of the fact that their older publications look outdated compared with their recent ones! I have books on my shelf that I adore, even although the photographs are long outdated. My book is also noted for its anecdotal content as well as the recipes - and the recipes are still very practical!

You mentioned Viewfield House in your review. This surprised me as this hotel is closed all winter from mid-October, until early in April every year. I know the owner extremely well and also know that he prefers not to cook dinner for residents any more as many of them choose to eat out in the wide selection of restaurants in Portree and other areas of the Isle of Skye.

I can't understand some of the terrible reviews of this lovely place!! We stayed in the rooms over by for one night and dined in the restaurant. We were greeted by a very friendly receptionist and taken to our room. The room was cozy and comfortable and I could have stayed there for days on end. The food in the restaurant was top class and again the staff were very friendly. If you are lucky enough to be able to afford a night at the 3 Chimneys - I would recommend it. It's not just about the food and accommodation - the journey to get there and the wonderful location is the icing on the cake - enjoy.

This was a wonderful place and met all our expectations. Yes, it is expensive - but you know this in advance and can make your decision about whether you want to go.

The rooms were great - really comfortable and a pleasure to be in. The hosts made us tea when we arrived, with scones and cake. We soaked in the huge bath and cuddled up in the bath robes.

Then dinner which we really enjoyed. I thought the courses were well thought out, well presented and not too small or big.

Breakfast was the added surprise. It was excellent, and I keep on thinking about it! I had the special muesli with what tasted like toasted seeds. I wished we could have returned to eat the other wonderful little choices for brunch - I hated them to go to waste.

Great experience and I thoroughly recommend it if you have the money.
