My wife and I spent three nights at the Red Cliffs Lodge. It is located in a spectacular canyon, 14 miles from Moab, that has scenery like the nearby parks. We used it as a home base for visiting Arches and Canyon Land National Parks. We stayed in the Executive Suite which has two bedrooms and a large private porch overlooking the river. The staff was very helpful and friendly. The food is good, but not spectacular, and the dining room has a nice view of the river and the surrounding buttes. You can watch the color of the buttes change at dinner time as the sun goes down.
They also have a winery on the property with tasting and retail sales. We live in California near the Napa Valley and are probably semi-wine snobs. Anyway, their wines were not our cup of tea.
The Lodge also has a pool and spa which we did not use, so I cannot comment on them.
