A disclaimer - I grew up in an italian neighborhood right outside NYC, although I now live in Park City. Because of this, I have never understood, with the variety of great (though sometimes overpriced) dining in PC, why we don't have a truly great Pasta restaurant. Oh sure, there are options, and there have been. But nothing like the places that are a dime a dozen in certain neighborhoods in NY, where they take pride in their food and the prices are reasonable.
I've said for years that Park City needs a "Trio" (as in Salt Lake City). And while Vinto is more of a Pizza restaurant, it is the closest thing to Trio that I've seen. A nice simple menu - a handful of nice apps, including salads, a bunch of brick oven pizzas, and a few pasta dishes.
The difference here is in the quality and the consistency, and the pricing - Dirt cheap, for a normal (not huge) serving of pasta that is cooked to perfection (al dente). And, like Trio, a very simple wine list - Maybe a dozen wines? Yet all carefully chosen and all priced at $26 (I could be wrong- check the menu). Or if you'd like the house red, you can buy it for a dollar an ounce!
Furthermore, they opened with a bang, with a large, seemingly effective staff. Service is good, and quick. They also have a small bar that can seat singles or couples when the wait for a table is prohibitive.
Which brings me to my first beef - no reservations. Right now, you walk in and put your own name on a chalkboard, and they seat you as tables are available. Maybe because of it's novelty, it's a long wait if you are there after 6 pm. Too long, like 60 minutes. Then again, you can get a great pizza here for $10 - a welcome price for starving locals as well as tourist families.
My only other beef is lack of pasta choices. The pastas are great - but there needs to be more options.
Oh, and hurry up and be open for lunch.
