In 1973 I ate magnificent roast lamb shank in Madrid. I have hoped, in vain, since to match that dining experience. While in Rota in September I asked the hotel staff for a really good restaurant and after some thought they recommended el Pesembre. WOW!! I not only ate there that night but returned on two other occasions. Their lamb matched my 1973 Madrid experience. Another spectacular dish is their Salt Fish, a dorado baked in salt and fileted at the table. I recommend those two dishes for your first experience at Pesembre; after those try the paella but don't pas up the lamb or salt baked fish.
