Wherever you may be staying in Lanzarote, it's not going to be more than a maximum 45 min drive from the airport, so don't bother with the almost compulsory transfer fee, offered by all of the travel companies save your £25 per head, and put it towards a car hire collect-able from the Airport.
The driving in Lanzarote is so easy, very good roads, with terrific intersections with long, long slip roads to get you up to speed to join the main carriage way, signage is very clear and well in advance of your junction.

What ever you do don't miss the Tamanfya National Park, it's awesome, weather you go in your hire car or by coach it will cost you some 8 euro per head, but you do get an incredible 40 min coach tour of the lava fields, how the coach driver manages to negotiate these tracks is just amazing, you will be thrilled or scared Silly.
At the first opportunity obtain a copy of the Lanzarote Gazette, its a free monthly magazine full of current info and offers of what happening.

Car and 2 passengers can travel to the neighbouring Island of Feurta Ventura from Peurto del Carmen only a 25 min crossing for 87 euro return, be there for 08.30 for the 09.00 crossing and return on the 18.00 its a good day out. It a very big island with quite a few attractions.
Google it before you go and make yourself an interesting itinerary.
Alternatively go as a foot passenger for 20 euro each, but not much do do when you get there without transport.
