Located in an early nineteenth century building surrounded by gardens in what was a residential neighborhood of Panama, La Posta has a long cool mahogany bar where a well crafted Mojito helps soothe the wear and tear of a typical day in Panamå.
It is a businessman's place, a place where the who's who of Panama first take their out of town visitors and a place where you become known after your second or third visit.
The restaurant has a stated policy of thinking globally and buying locally, the fish is mostly line caught by local fishermen. The organic chickens roasted in a wood burning oven, supplied by a retired Peace Corps member are raised humanely (certified!) the tomatoes from imported heirloom seeds.
The chef is a Panamanian trained in Wash. D.C.
