One great thing to do is get a bike and go up to Arumbol beach, with the Arabian Sea on one side and then jungle at other side with flourescent mud to cover yourself in.
If you are so inclined, rent a beach hut on stilts for the night for around £3, the ferry leaves at 8ish so if you're late, you're stuck! Great pizza restaurant there and say hello to the Sewdish hippies that live in the Banyan tree!
At Anjuna shore bar on Wednesday night just make sure you don't sit at the front when the music starts - there's too must hassle from beach sellers.
Opposite Don Joa Hotel on Main St. there is a Chinese/Tibetan restaurant with fab food, excellent value.
Best tip: get to know one main family of beach sellers and on the first day promise to buy from that family at the end of your trip. They make sure your not hassled the whole time.
