 After you have an idea of the cuisine you seek, grab a local!  Best not to nab one off  the street, so step into your hotel lobby and talk to the concierge.  S/he will point you in the right direction.  Some gems are off the beaten path.  Some spots have great reputations, despite horrid service.  An experienced local is the only person who can steer you in the direction of a truly fantastic experience.

 Eateries with notable, well-earned reputations include: Blu Kitchen,   Snake River Grill, , The Blue Lion, Sweetwater, The Million Dollar, The Silver Dollar, and The Rendezvous Bistro -- to name only a few of the plethora of options in the town of Jackson.  Out on the west bank of Jackson, located on Teton Village Road, stop by the Calico, Steiglers, or Q Roadhouse on your way to or from Teton Village.  Once you are in Teton Village, make sure you visit Il Villagio Osteria.  Also Masa Sushi and don't forget the Mangy Moose Restaurant and Saloon.
