Los Mayas is a rare dining experience.  It's very difficult to find food from the central Mexcan state of Puebla that is also representative and haute cuisine.  The enchiladas filled with plantains, the pasilla pepper filled with ground beef, chopped fruit and nuts and topped with pomegranate seeds, the delicate, chocolatey mole, the excellent Sangria.  This place is a rare find.
