You will be welcomed at 9 am, by Riccardo at the starting point, dependind which daily market tour you will take.
Then, after an introductory chat about Italian cuisine, we will go walking in the market, examining and talking about the day fresh product.
Looking for the fresh season vegetables, fish, clams ecc we will find, Riccardo will guide you to compose the lunch menu.
With your host you will live the tradition and the atmosphere of the fresh stall market, lookiong for the genuine truly Italian and local food.
Riccardo will guide you to understand which are the fished and the farmed fish, how to recognize the stale or de-frozen products and how to compose the most tasty dishes with the ingredients of the season on the market.
For each dish will be described the ingredients, the way to work them and the differences in their use in the various dishes.
After that, and after a short stop in a street food stand, the "street step" of your experience will be complete and the class will move to home, where you will prepare, various dish , collaborating with Riccardo and under his direction.
Cooking and assembling the meal will complete the "kitchen area" of your experience, that will be completed in the dining room, sitting at the table with Riccardo and tasting your dinner accompanied with a bottle of good wine.
Sitting at the table, eating and talking together will help us to analyze, comment and deepen Italian culture and exchange experiences and stories.
A dessert, creamy and sweet, will close our foodexplorer experience.
