They made us very welcome and taught us so much about making three different kinds of pasta. The wealth of knowledge that Gianfranco had to share was outstanding. Please arrive with room in your stomach for you will not only eat the meal that you helped prepare but a lot of other scrumptious food as well. Pina is not only lovely but also brimming with culinary knowledge. Throughout the day, she shared her passion for cooking in a way that made us feel both inspired and at ease. Her home is stunning, providing the perfect backdrop for an authentic and intimate cooking experience. The food we prepared was absolutely delicious, and we learned so many techniques and tips that we’ll definitely use in our own kitchens. Rosa Maria taught us to make three dishes, fresh Sicilian pasta, eggplant and tiramisu. She also shared many other her other Sicilian cooking techniques as well as the history of the food and region. We sat down to an amazing dinner that Rosa Maria complimented with other antipasti and Sicilian wine. We ate so much! She didn’t rush us through dinner. Both she and her partner, Francesco, are so knowledgeable about the science behind the cooking and could not have been lovelier to be around. Making a recipe passed down from Alice's nonna in the very apartment where she grew up made it even more special. She patiently showed me the MANY steps required for making the shells and, in the end, the cannoli were DELICIOUS! The conversation was great and Alice even made me a little package to take home with leftover shells, a small piping bag with the cream and bit of the orange peel and pistachios. In fact, I just ate two of them (the day after the class). I would highly recommend this experience!Written 2 September 2024
- G7806GDjanaf0 contributionsA cooking class worth being stranded forWhile my family stayed on Ustica (an island 20 ish miles away) my son and I took the ferry to Palermo to learn how to make Sicilian pasta and cannoli. Rosa Maria is clearly an accomplished cook, which we learned runs in her family. She is also a talented teacher. When we couldn't quite the the hang of shaping the pasta without crushing it, she was patient but clear in her instructions so I know what to practice when I get home. Sitting down to lunch was lovely. We got to know her husband and Ate Sally. We were sent home with leftovers which was a saving grace when we arrived at the port and learned all ferries had been cancelled till the next morning, standing us in Palermo for the night. In all the chaos that followed, we at least had good food to eat. The next morning as we rode the ferry back to Ustica, I had no regrets. Grazie mille Rosa Maria. - Helen P0 contributionsUnique Sicilian cookery with Rosa MariaWe celebrated my husband’s 50th birthday in Sicily and the pasta and tiramisu cooking course was a special birthday experience for my sister’s and my family together. It was a fantastic and unique experience. It completely surpassed our expectations. We learnt a lot and had lots of fun. We had 3 teenagers in the group and four adults, we all really enjoyed it. Rosa Maria was so friendly and welcoming and her Sicilian cookery knowledge made special memories for us. Highly recommend and thank you!Written 19 August 2024
- Genee27900 contributions10/10 solo trip experience!What I thought would be a small group cooking class, turned out to be a one on one class with myself and wonderful hostess, Agata! She was so welcoming, kind and patient with me...I felt right at home and thoroughly enjoyed making my pasta dishes and tiramisu! This was the most heartwarming experience of my trip and I am SO glad I did it. Their breadth of knowledge was amazing. We had a wonderful time and strongly recommend this experience to anyone who has fun cooking. We attended the evening "The art of the Italian Aperitivo with a local: Learn & Enjoy in Palermo" with Signora Pina - who has several other classes but this was her first for this one. Just saying the food we prepared with Pina was outstanding is an understatement - and writing this review is making me hungry for them again! The dishes included a yeasted vegetarian rolls with cheese and rocket, a ground pork with other cheeses, speck ham wrapped around prunes, a gorgonzola walnut dip and more. My description does not do justice to the finished items and there were other ingredients, so take notes. Every item was flavorful and well-balanced, and served with Italian wine. Frankly, I had no idea it was going to be as good as this. The setting - in Pina's aristocratic apartment with a balcony view of Mount Pellegrino where we ate - was never expected and the most memorable of anything we ever did in Sicily, and clearly the best cooking experience - and we have gone to quite a few! Bravo Pina!
