The class organizer Laura was quite helpful and accommodating, and our cooking class with “Mamma Anna” was in one respect what we were seeking: it was a hands-on class. Otherwise, it was disappointing. The class began, as advertised, with a trip to the market to buy (some of) the food we would be cooking. We had, however, assumed we would be shopping at a local open market: instead, we followed Anna and her daughter around town in our car to three local stores. From there we drove to Anna’s (summer) home. While the kitchen was nice, it wasn’t big enough to handle a party of four comfortably. Then when learning to make pasta, Anna singled out one member of party and kept telling the others that we weren’t doing it correctly: we should do it “like she’s doing it.” Finally, after a lunch at which we ate the food we had prepared, Anna filled out what were, essentially, grade cards, rating each of us an A, B, C, etc. - perhaps a holdover from her days as an elementary school teacher. The two women in our group are excellent cooks, and their spouses can get by. We took the class to have fun, to enjoy the camaraderie of our group and host, and it the process perhaps to learn some new cooking techniques. Turning the class into a competition took the fun out of it.

We are quite surprised to read this review online, especially since the last written correspondence from your group was thanking us for making an exception to our cancellation policy, which we did immediately and without question. The description we offer of the program is that you would be visiting food artisan shops and does not state that you would be shopping at "an open market". The location and hours of markets and shops change daily, so no two programs are ever exactly the same and it just depends on the day of the week and menu, as to where you will shop on any particular day. Regarding the kitchen: please consider people travel from around the world to see Trulli and they are under strict protection and regulations of UNESCO world heritage laws and your cooking instructor never thought to ask if you would want to cook in a Trullo or not. The kitchen near the city center where classes are held most of the year is actually the opposite and much larger than most home kitchens in the area. The funny thing is people actively seek to cook in a Trullo to be able to experience this unique environment but as you see, the interior spaces are not as large as seen in modern homes. Anna apologizes for the misunderstanding of the friendly "competition" that day, which she said was meant to be in pure fun and truly apologizes if the point of the experience was lost in translation or misunderstood. She was so impressed by the one person you mentioned in your group who was so proficient is their skills that they seemed to be a local expert already after only a short period of time!! In any case, we hope you have fond memories of your Italian holiday and we wish you all the best!

The beauty and attraction of cooking the 'Pulglian way' is in absorbing the flavour and essence of the produce without unnecessary complications or distractions. This is exactly the experience we were after and it is exactly what we got. Our morning started with a wonderful trip to the local markets where 'homegrown and fresh' are not simply buzz words but are a way of life. Foccacia, orichette, potato croquettes and frise with fresh tomatoes are just a few of the dishes that we cooked under the supervision of our host Ylenia. But it wasn't only about the cooking. We also experienced the warmth and hospitality of the locals. Whether it was at the markets, the village or at the cooking school, l felt like l had known every-one for years. Thank you Ylenia for your instruction, your warmth and let's not forget the wine!!

We are fortunate enough to travel to Italy at least once a year, and our travels always include a local cooking class or food tour. My dream has always been to find a real Italian mamma or nonna who will teach us how to make her own favourite dishes using local ingredients and sharing a meal with her family in their home. This was that dream come to life. The day in Martina Franca had an unsteady start, as “Mamma Anna” was twenty minutes late and the café where we were supposed to meet showed no signs of being open. When she arrived, we didn’t get the coffee and cornetto as advertised, nor did we visit a local market, as we expected. What transpired made up for this, and was infinitely better, as we made a mad, two-car dash around the town visiting small specialty shops that we otherwise would never have known about. We went to a latteria to buy assorted cheeses and saw fresh mozzarella being made. We went to a wine shop and filled up a large bottle with table wine from a spigot. “You want a coffee?” asked Mamma Anna, double parked outside the wine shop. She took us to a café that was packed with locals and immediately got served by barking “Andrea!” at an affable waiter she had once taught a few English phrases to. A greengrocer was next – cheap and very cheerful – followed by a small supermarket: “You can drive up the one-way street, but be careful”. Shopping done, we followed Anna to her countryside home and were made welcome in her kitchen. I would have preferred more hands-on experience, but we did a bit of paring, chopping, breading, and layering while Mamma Anna worked magic in her domestic surroundings. We picked herbs from the garden, a lovely spot where Anna fried the aubergines sandwiched with smoked scamorza and where we shared our resultant feast. My ultimate aim was to make orecchiette in its homeland, and we got to do that and more. Mamma Anna unfolded her library table – its special use was for making pasta – and we made three different types of pasta using only semolina flour and water. These were later served with three different sauces. Our meal was shared with Anna, her daughter, and husband – course after course of delicious local foods. The conversation was pleasant and Anna kept getting phone calls wishing her well as it was Santa Anna Day that day. We ended with coffee granite and cream, a wonderfully refreshing treat, and a sampling of Anna’s many home made liqueurs. I would like to have had more practical experience and advice, and I wish I had been brave enough to ask Anna to teach us in Italian, as we have both been trying to learn, and she is a skilled and patient teacher, but overall, it was an excellent and memorable day. We were worried at first of losing out on the 20 minutes missed at the start of the day, but we ended up staying two hours longer than scheduled. I would have paid as much simply for the meal, and all the rest, especially the madcap shopping experience beforehand, was priceless. Thank you, Anna, and Ciao Laura.

We contacted Ciao Laura but had no idea what was involved. It was an amazing experience. We were met by Michaela who drove us to the local market where we chose what we were going to cook. He then drove us to the cooking school in a very small town where the class was held in a former palace. Ylenia, the owner, set up a private cooking school where the "mamas" of the town helped us to learn their traditions. We prepared homemade orrechette, mussels with rice, tuna meatballs, and many more things under the direction of Ylenia and with the help of Angelina and Ylenia's own mama. Wine was enjoyed with each course. We left with our tummies and our hearts full. I cannot say enough wonderful things about the school and the family who owns it!

As soon as we met Paola and Carlos in front of the small market in Trastevere, we knew we are going to enjoy the day. They give you an immediate feeling of old friends getting together, and a sense of their passion to Italian cuisine. The cooking experience itself, in the well equipped, elegant kitchen, located in a lovely piazza, was fun, educating and professional. (especially when it was accompany with lots of wine) We recommend this to everyone who is looking for a different yet exiting experience to do in Rome.
