I'm sorry I can't give you a for sure answer as I'm not sure but they probably do pick up at Hyatt since they did at most hotels in downtown area, at end of day / tour, we stopped at a lot of different hotels for drop offs but I can't recall if Hyatt was one, we stayed at Grande Hotel, which was furthest out and they picked us up there.
As for how it works, we called to verify day before, they gave us scheduled pick up time to be at lobby, they were on time, actually a bit early, they round up everyone in lobby, bus is parked outside waiting for you, from there to terminal to pick up tour guide and other passengers and your off.
