First rate, among the very best in Paris and in the world. A wide variety of offers, from just a rocher to a big gift box. In one of the nicest neighbourhoods in Paris, close to the Seine River and St. Germain des Pres.

The shop has been in existence for 200 years. Debauve was a pharmacist to Louis XVI. He combined his interest in pharmacy and chocolate making to create a “ healthy chocolate”. His chocolates had novel ingredients so he marketed them as helping people with nervous stomachs.
The chocolates were reasonably priced and there were so many choices!

Very unfriendly staff, but beautiful presentation and great tasting chocolate. Worth the money.... as long as you can ignore the snobby clerks!

I have visited this store several times. I have never been treated rudely. The chocolate experience here is like none other. I always place it on my "must see" list for everyone. Perhaps those treated rudely (they are French, after all! -- it's important to have a sense of humor when traveling.) were there after a particularly harrowing tourist day. Polite Americans are unfortunately few and far between in other countries. It is a definite "no-no" to try to touch the merchandise in this small store. Much better to ask questions. The employees that I have encountered there were very nice.

Debauve et Gallais was the last stop on a do-it-yourself chocolate tour led by my adult son on a rainy day in Paris. We loved the old world interior of the store and the presentation of the chocolates. Samples were readily available. 100g chocolate bars were reasonably priced, in the 8 euro range as compared to some of our other stops where the bars were almost twice as expensive. We did not experience any of the haughty attitude expressed in other reviews. However, I do speak some French and I find that in general, my attempts to speak French, even if poorly or minimally, are greatly appreciated.

If you're a tacky tourist, you will not like this place. Someone should write the memo, you don't go into an expert salon and start pawing things (no offense to other posters, you do not grab things in shops in Paris). You say hello to the people, you browse, and then you sample, try, and have a ball!

If you approach an expert with the right attitude, you get treated well, like I have been every time I go here. Not to mention, the tea is out of this world. They were one of the last to supply the French Monarchs. Enough said?

Go in, say hello, and ask to smell and sample all you like. It's not even over priced like a lot of the tourist-trap clip joints in the world.

Debauve & Gallais is truly a gift, to be savored. Enjoy!

When I lived in Paris I used to buy my chocolates there. They were among the finest of Paris. Being back in Paris this week, I thought I would go back and buy some more. What a disappointment! The quality has completely plummeted in recent years and the chocolates are now very average. The location is still as nice obviously, but don't buy the chocolates. In terms of quality, they are similar to Jeff de Bruges, which are way cheaper. If you are really interested in good chocolates, look elsewhere (Marcolini being my personal recommendation).
I got a sampling of all the different dark chocolates they offer. They're all pretty similar, unsavorily sweet and fat for the price... They are not even properly tempered, so they have this bad matte look to them. Also, although they offer many different types of chocolates, they only have a limited diversity of ganaches and just repackage them. For instance, the "Palet 85% cocoa" is actually filled with a honey ganache, like the Honey Palet!

Debauve & Gallais chocolates do not contain any preservatives or industrial ingredients such as soy lecithin and other abominations. Some people have left comments saying their chocolates have no taste or the texture isn't right. I say that the texture is perfect for a product that doesn't use ingredients that help them cheat. Have a look at the ingredients of all the other chocolateries and you will see the long list of preservatives and soy ingredients. Some of these manufacturers even position themselves in the same price range!

To appreciate these chocolates, you must have a keen sense of smell and a refined palate. The flavours are subtle and exquisite. The chocolates are to be enjoyed with a fine glass of champagne and they are to be eaten very slowly. I keep them in my fridge and enjoy one or two a day over the holidays. If you are looking for sickly sweet and artificially flavored chocolates such as Quality Street, Lindt, or After Eights, this is not the shop for you.

Admittedly, I may be biased. About a decade ago I did extensive web research to find out what the finest truffles on earth were. I wanted to do a spectacular gift for my wife and I consulted numerous sites and blogs (I think there were blogs back then, maybe forums) to see what the general consensus was about the finest truffles on earth.

Over and over I kept finding Debauve et Gallais. I mail ordered the truffles (very expensive) on a hunch. They were then, and remain to this day, SUBLIME. My wife wanted to make a pilgrimage to this chocolate truffle Mecca while we were in Paris, and it did not disappoint. Incredible products.

The service staff acts more like they are selling you jewelry than chocolate, and I can see why some people found it off-putting in earlier reviews. To me this level of seriousness and professionalism was appealing, as it seemed appropriate considering the craftsmanship of the product. If you are looking for bubbly, enthusiastic service akin to that which you would get at "the mall" you will be disappointed. If you would like to be served by a highly knowledgeable, impeccably dressed, professional who is "all business", then every question you have and anything you'd like to taste will be provided.

If you are assembling a box of 300, 600 or 1000g, make sure you don't miss the "Earl Grey" truffles, the Fleur de Lys caramels, or the new pralines made with sesame. All of them are incredible. Also, almost every truffle here is filled with subtly-flavored ganache, rather than nougats, cremes or fruit purees. The flavors are incredible, but an orange truffle will be dark chocolate around orange-scented dark ganache, not an ooey gooey orange cream. Delicious, but if you like the other style there are tons of incredible Chocolatiers in Paris that do those extremely well. If you like the "chocolate covered in chocolate" style then DeBauve et Gallais is exactly what you're looking for.

One of oldest chocolatiers in Paris, this shop enjoys a good location and reputation. The lady who helped us was attentive, gracious and spoke good English.

How much chocolate is enough? In Paris, it seems you can eat sweets all day and never sample it all!
