I would recommend that you spend a couple of days driving around La Rioja and don't miss the many wineyards around that area, especially The Marques de Riscal in Elciego. Also, I would definitively recommend that from pamplona you drive to bilbao, go along the coast to san sebastian (you would need more than a day to do so, so I recommend you spend one day in Bilbao) and from there you drive trough the coast to all the french basque country to end in san juan de luz, one of the most beautiful places I've seen. From there you could drive to cataluna etc.
If you plan to do it to end in portugal, you should then do Cantabria, Asturias and definitively go to Portugal trought galicia. Hope this helps!
