My wife and I took the Cooking Class at a Pasta Factory in Bologna and thoroughly enjoyed it. Although we have some experience making pasta at home, we amazed how much we learned about how to make pasta properly so that it has the right taste, color, and bite. Martina and her assistant were very quite charming, easy to chat with, and excellent instructors who explained clearly all the steps and helped us master the techniques ourselves. In the end, we made tortellini, tortelloni, and tagliatelle (all very important to traditional cucina bolognese) which we then cooked and ate for lunch with a glass of Pignoletto wine, a local, lightly sparkling white wine that paired nicely with the pastas. The whole experience was a real delight and felt more like we were visiting their home than simply taking a class.
