Chef Paolo taught us how to create masterful vegan Italian dishes. His humor and extensive knowledge of Italian cooking made for a wonderful day in the kitchen. Chef Paolo has travelled extensively and brings that knowledge to the culinary experience. It was hands-on, fast paced and leisurely at the same time. We loved eating everything we learned to cook.

If you want to get a literal taste of Tuscany, do not hesitate to book classes with Chef Paolo. I took many of his classes, with my favorite being the Seafood class. His version of mussels with saffron and Sambucco was worth the entire trip. I learned how to make homemade broth and many authentic Italian specialties. Of course, at... More

My husband and I went to the Favorite Dishes class. We were joined by two women. The class was as advertised -- delicious, easy to prepare food. I am not an experienced cook but the pace of the class was not a problem for me. We liked the knives so well that we ordered a couple when we got home.... More

My wife and I were on a six week tour of Italy. While staying in Lucca I signed up for three cooking classes with Chef Paolo. Chef Paolo's cooking school is an easy drive from Lucca. The classes were fantastic. Chef Paolo's depth of cooking experience, his fantastically flavorful recipes and the sense of humor that he injects into the... More

What a wonderful experience. I thought I knew how to cook Italian food. I was so wrong. Chef Paola is so talented he not only knows how to cook but he makes the lessons so interesting. I learned how to cook all kinds of sauces and pizza. We stayed at the hotel above the restaurant. It was great. Also Chef... More

My wife and I spent a wonderful day learning Chef Paulo's easy to follow recipes and cooking techniques. His kitchen is a short taxi from historic Lucca. Chef has a delightful sense of humor but a serious attention to the details of fine food preparation. We have already used several of the recipes back at home. One of the real... More

I took two classes with Chef Paolo--one on pasta making and the other on Tuscan specialties. Both were excellent. The instruction was both serious and entertaining, and the food that we made, and then ate, was delicious. Chef Paolo not only demonstrates cooking techniques, but also talks about the ingredients--and the ingredients he provides for this classes are of top... More

My daughter, her fiancé and I really enjoyed doing Chef Monti's Tuscan Cooking course while we were staying in Lucca. We cooked wonderful ravioli with hand made pasta; delicious bruschetta; panzanella; superb roast pork and cantelluci. Chef Monti is lots of fun and the morning in the kitchen was extremely well organised and smooth. I would definitely recommend learning to... More

I did the Pasta making class with 2 of my girl friends during my recent trip to Italy. I was a terrific experience and we had a lot of fun making 6 different types of pasta and a dozen varieties of sauces. On our request, Chef added tiramisu to the menu. The recipes were easy to make and delicious. I... More

My husband and I took Chef Paolos Pasta and Sauces class. It was a fun experience and very informative. I am a personal chef and gleaned some great tips from this class. It was well-worth the time and money and I highly recommend. Paolo is fun and made everyone laugh plus his English is very good which is helpful. He... More
