My wife and I spent a wonderful day learning Chef Paulo's easy to follow recipes and cooking techniques. His kitchen is a short taxi from historic Lucca. Chef has a delightful sense of humor but a serious attention to the details of fine food preparation. We have already used several of the recipes back at home. One of the real... More

I took two classes with Chef Paolo--one on pasta making and the other on Tuscan specialties. Both were excellent. The instruction was both serious and entertaining, and the food that we made, and then ate, was delicious. Chef Paolo not only demonstrates cooking techniques, but also talks about the ingredients--and the ingredients he provides for this classes are of top... More

My daughter, her fiancé and I really enjoyed doing Chef Monti's Tuscan Cooking course while we were staying in Lucca. We cooked wonderful ravioli with hand made pasta; delicious bruschetta; panzanella; superb roast pork and cantelluci. Chef Monti is lots of fun and the morning in the kitchen was extremely well organised and smooth. I would definitely recommend learning to... More

I did the Pasta making class with 2 of my girl friends during my recent trip to Italy. I was a terrific experience and we had a lot of fun making 6 different types of pasta and a dozen varieties of sauces. On our request, Chef added tiramisu to the menu. The recipes were easy to make and delicious. I... More

My husband and I took Chef Paolos Pasta and Sauces class. It was a fun experience and very informative. I am a personal chef and gleaned some great tips from this class. It was well-worth the time and money and I highly recommend. Paolo is fun and made everyone laugh plus his English is very good which is helpful. He... More

My wife and I took Chef Paolo's Seafood Cooking Class while we were in Lucca this October and we are so happy we had this experience. Actually we had booked a class with someone else that was cancelled and were referred to Chef Paola's school. If you love to cook or want to expand your skills then do your self... More

Four of us visited Chef Paolo to learn how to make pizza and focaccia. We weren't disappointed. I have never eaten so much pizza. We ate some of everything we made. The course was great, how to make the dough, what to top it with, how to cook it correctly. The focaccia with potatoes on it was amazing, something you... More

We had a fun day making bread, focaccia, and pizza. There were 4 adults and 3 children ages 9 and 11. It was a perfect outing filled with laughter and new experiences. Chef Paolo was very attentive to the children and the outcome of our class was a delicious pizza lunch. We took home the leftovers and had snacks for... More

My two girlfriends and I took Chef Paolo's class while we were in Tuscany. It was a great experience. He has a great sense of humor. He also made sure everyone in the class had hands on experience in preparing the meal. The lunch was amazing. I have an allergy to muscles. He made sure several dishes were made without... More

We love Lucca! We love Chef Paolo! His command of several languages (with a sense of humor that needs no translation) is delightful! We thoroughly enjoyed this culinary experience. It was one of the highlights of our trip. After we returned home we prepared one of Chef Paolo's menus with and for friends. It was great fun to re-create and... More
