This is one of my fave places in Languedoc-Rousillon and one of the best for truly great wines. For English-speaking people especially, the front-of-house owners will offer tastings accompanied by explanations in English as well as provide fascinating details about this historic chateau where the engineer of the Canal du Midi, Pierre-Paul Riquet resided during its construction.
Currently the owners are building a new wine tasting area and this will offer a truly great location to sample their different vintages and "levels" of wine, all of which are extremely reasonable at cellar door prices. I am a huge fan of their "Les Baronnies" 2009 and having never been a big fan of French wines after being totally spoiled with truly great red wines from Australia, Chile, New Zealand, South Africa and Argentina), this chateau (amongst others in Languedoc-Rousillon) converted my capacity to marvel and be very proud of the wines of my adopted home area in France.
Many wine drinkers are not aware that some "great vintages" in years past from places like Bordeaux actually came from Languedoc-Rousillon and chateaux like Paraza!

Over the past week, I have taken visitors from the US and Australia to Château de Paraza. The US visitors were wine connoisseurs and those from Australia, vignerons. All were very impressed with the wines of Château de Paraza. In both cases we had sampled selected Château de Paraza wines from our cellar with planned food and wine-matched dinners, prior to our visit to their winery.
Château de Paraza is very much a dedicated family operation with members of the Danglas family (Antoine, Mathieu and Lucy) involved in all key aspects of operation along with mother, Annick. With their wines, they have a clear perception of where they are, where they going and how they intend to get there through the development of quality vins du pays and AOP wines. They are also gradually redeveloping the winery, a large and commodious building of great character and the allied grounds of the château. It is a magnificent setting all round. Again, the bonus for visitors who do not speak French is that all the family speak good English and can therefore explain in great detail the history and every reality and dream of their operation as well as the convoluted challenges of bureaucracy and controls operant in the French winemaking industry.
Revisiting the wines was great, as always. Along with three other wineries in my adopted region of France, Château de Paraza wines (above all and still, their "Les Baronnies") have become firm "faves" with a place in my cellar and at the dinner table. This is going to be a long association!

This is somewhere very special indeed, the Chateaux was built in the 16th Century and it blends the history and the high quality restoration perfectly. The hosts were friendly, helpful and made you feel at home, breakfast was great. The rooms are decorated to the highest standard and in keeping with the property We liked the Swimming pool, good size with cover from the sun as well as loungers The view across the valley over the terraces was great, right next to the Canal du Midi. Being attached to the Winery gives you an extra dimension to the experience; thoroughly recommended.
Just as a watch out the Chateau is a way from the nearest rail or bus connection, but the Chateau arranged a car to pick us up. Being a small village there are very few places to eat, but the team at the Chateaux had plenty of recommendations. There was nothing about the Chateau itself we didn't like, we spent our two days smiling and relaxing.

If traveling by boat or car through Paraza, try and stop in here. Exceptional wines and no pressure to buy (however our group came away with a couple of cases). Even if not in the market for wine, climb the hill from the canal to view this amazing chateau. The owner tells us that they are presently renovating the chateau in by fall they may be accepting guests. Some of the walls of the chateau were made using old head stones from an adjacent cemetery and they have even exposed one to show this, If you do a tasting you are in for an example of how it should be done. Not only do you get a decent sample of the product but Antwon will explain all of the aspects of creating this wine and some helpful direction of what you should experience while tasting.
Also, the Chateau make soap on site from donkey's milk. You walk by the donkeys on your way up from the canal.
Make sure you take away some wines as you will be glad you did.

We stopped here after passing by the first time and so glad we stopped. A walk up the path to the beautiful Chateau and gardens. We tasted the standard wined and also the luxury and we were super happy with our choices of sparkling, white and red. In particular the ‘X’ red was a favourite and one we would all recommend

We (2 Australian couples) are travelling on the Canal Du Midi and were hoping to participate in some wine tasting whilst in France. We saw a wine tasting symbol in the official Du Canal Du Midi book for Paraza so pulled up at the brand new docking area and walked up the hill to the centre of the village. Whilst not well signed the Chateau De Paraza was well worth our visit. The Chateau is beautiful and restored well and I understand that they are now hosting functions. What a fabulous space ! Chloe was absolutely delightful and had a huge wealth of knowledge about Paraza wine and French wine in general. 1 of our party did the free wine tasting and the other three did the €9 tasting. What a fantastic experience for 4 Aussies who love their wine and tastings. Highly recommend Paraza and Chloe! We bought some bubbles, some Rose and off course a beautiful bottle of red.

I cannot recommend Chateau de Paraza enough! I got married at another Chateau in the area, and my biggest regret is not having my wedding ceremony at Paraza. The Chateau is beautiful, and Lucile and her team were an absolute pleasure to work with. Planning a wedding is stressful, and Lucile made me feel relaxed the months leading up to the wedding.
We did a group wine tasting at the Chateau for 40 people, and the wine and food were delicious. The service was superb, and all of our wedding guests loved the experience. I also had my bridal suite at the Chateau, and I could not be happier with how it turned out. As I said, the Chateau is stunning and a true French Chateau - I got so many gorgeous photos that we will cherish forever! I highly recommend booking Chateau de Paraza for your wedding or a weekend getaway with a group. My husband and I can't wait to go back for our anniversary!

Half hour’s tasting all of the wines from Paraza. The white Velvet (so-called by the texture of the label) is so fresh and clean to drink. We also ordered some 2014 oak-cask aged wine and have had it shipped to the UK. It was very quiet at the tasting barn which was great as it allowed us to take our time and really enjoy the different wines. The tasting sizes were a bit mean though... hardly enough to swill around your mouth. Ideally, fill the glasses a bit more!

I first reviewed Château de Paraza some years ago and since that time, the building and renovations to the wine tasting area have been completed, there is a tapas bar and grocery section and there is also high-end chambres d'hôtes accommodation at the Château itself.
Paraza is a charming village on the Canal du Midi and Paul Riquet, the financier and engineer for the canal, stayed in the château when work was underway.
The facilities are now first class and simply second to none, the wine tasting and tapas bar area being elegant, high-end, huge and well appointed, giving access to the huge grounds and beautiful views across the countryside to Canigou, the high point in the Pyrenees separating France and Catalunya. The large space also allows musical events, art exhibitions and food and wine experiences. Visits to the vineyards are on offer also along with wine education. Another point is that the tapas bar is open until 8:00pm. Private functions can also be catered for but advance bookings are essential.
There are two possible parking areas (one near the mairie and one near the tennis courts) but generally, street parking is possible also. For those arriving by the Canal du Midi, direct access is possible.
The bonus is that the wines are truly superb, adding to what can only be described as a truly exceptional experience all round, assisted by pleasant staff who know their stuff. Highly recommended.

We didn't expect to find such a wonderful space in the village of Paraza in the Minervois appelation in Languedoc but what a treat... You enter this hilltop winery through the fermentation room itself and then reach a vaulted tasting room adorned with chandeliers and antique farm equipment. The walls are adorned with paintings and other works by local artists. The room opens onto gardens with a panoramic view of the vineyards and groves in the surrounding landscape. The staff was super friendly and knowledgable on local reds, whites, and roses. We loved the Palma whites best, a racy grenache blanc softened by roussane and a hit of oak. The Bad Rosie rose was pretty irresistible as well. Great spot...
