The Mekong Delta is a bit of a drive from Saigon. We did the day trip to the Mekong Delta and that included a temple stop and various boat rides and stop-offs at Island attractions (lunch, coconut sweet 'factory' etc). This was a full day and really enjoyable.
Saigon is a big city - but, we found it rather dull from a tourist point of view. The Palace is dull (see it in less than an hour) and the War Remnants museum is not like a Western Museum (it was propaganda mostly) and takes less than 40 mins. Notre Dame is small and we couldn't go inside... and the post office is, well... a big post office. The Bitexico tower was worthwhile for views and a nice lunch.
