Yes it's safe to go, and you'll love the colourful fountain: make sure you take lots of photos of the mosques with the fountain in the middle, they'll look great! It gets very quiet at night so makes for a beautiful walk.

Well , all places of interest you indicated are walking ( max 10 min ) one from another. I don't think you need any special tour. Just get a cab from the port and ask to drive to Sultan Ahmed ( blue mosque ) . The Hagia Sophia is just across it, the grand bazaar is walking distance. The only thing - I would suggest to visit Basilica Cistern ( it's across Blue Mosque as well ) . it's absolutely unique!
