Great experience, fabulous food, good introduction to vegetarian Curries and accompaniments

Went to this day with three friends, unsure of what to expect. Seasoned cookery school is set in the most beautiful grounds of an old hall, in what seemed to have previously been a stable block. We struggled to find the car park initially but were helped by friendly groundspeople who showed us where to park.
Very friendly, professional cookery "fairies" gave a warm welcome with hot and cold drinks and freshly made biscuits.
From 10.15 to 4pm we watched Chef Sumayya Usmani demonstrate how to cook spices in a manner that would layer the food with exquisite taste.
We cooked 6 dishes, eating some for lunch with wine, and eating more again at the end of the day and still took lots of food home with us.

The other course members were fun to be with and we helped each other along the way, with plenty of fun, giggles and support where required. I loved it and would go again.
Some of my friends have been to other cookery schools and felt the day was less well organised than previous courses in other schools (some recipes had instructions missing but this was alleviated by watching Chef Sumayya Usmani demonstrate the dish, and being able to amend the recipe booklet given. Also some ingredients and tools were not always in the right place at the right time which caused a small confusion). A cookery book by the chef Sumayya Usmani would have made a great item to come away with from the course.

What a super way to spend a sunny day with Tim and the Catton estate team - foraging and feasting - smoked mackerel was delicious and we had such fun making focaccia , then to finish off with a super 3 course meal sitting with tremendous other fellow foodies was just great, will definitely return :-)

Seasoned Cookery are a passionate team of professionals with a wealth of knowledge about different cuisines. I thoroughly enjoyed the event I attended, ably led by Kim, making three delicious and inspiring courses in just a few hours! The venue is simply delightful! A big thanks for a fantastic experience and a very warm welcome.

Very good introduction to Charcuterie and Curing

In just 6 hours we made 6 different types of food including bacon, hot smoked mackerel and sausages. Our Chef for the day, Steve Lamb, from River Cottage, was very knowledgeable about brining and curing and answered all our questions. We were a mixed group - some already curing and some just starting - but we worked together well and all learned a great deal. The only word of advice is, like most cookery courses, we were standing for most of the day - hard work and worth it.

Bread Making Course

What a fantastic and welcoming venue. The tuition from Andy Tyrell was outstanding and the pace of the day was perfect with the correct balance of demonstration and practical. I learnt so much and since coming home, have re-made my breads twice each.

I’ve been on a number of courses here. The quality of the teaching is always brilliant and the organisation begins the scenes is always faultless. I’d highly recommend the pasta and the bread courses as these in particular, I’ve used again and again and again at home.

Well done seasoned and keep up the good work!

Seasoned - Spanish Cooking - Tapas and More

Bought this for my husband as a Christmas present. (My friend also bought her husband one and they attended together). Although they enjoyed their day they were disappointed that they didn't make anything on their own. The day lasted 6 hours but every dish was made between either 2 or 4 of them or made as a demonstration by the course leader. At £165 pp we were expecting some lovely ingredients/tapas with gambas/chorizo etc but instead we got aubergine and bean dishes which although very tasty were also very cheap to make. Had the course cost half the price maybe we'd have been more satisfied with the day.

I'm glad that your husband and friend enjoyed the day. Our main focus is to give people a range of dishes & skills that they will recreate in their own kitchens. To clarify, the dishes cooked on the Spanish course are: - Almond & lemon meringues - these are eaten on the day with delicious PX raisins & a full bag taken home with each guest - Spanish Tortilla Omelette - this is a demonstration with plenty of tasters for everyone - Pan con Tomato on home made sourdough with Spanish Serrano Ham - Aromatic butterfly leg of lamb - this is a demonstration using top quality Lamb which everybody enjoys with their feast during the day - Empanada - this is a large dish, made in tables, with ample for people to take home & uses line caught Tuna - Moorish spiced aubergine - this is made in pairs & guests take home extra - Butter beans - as above Taking food home isn't meant to be a representation of all the dishes on the day, it is to people to allow people to cook more dishes than they would eat in a day & then they can enjoy some at a later date. We aim for people to take home vegetarian dishes / desserts as they, in general, pose a lower health & safety risk for people taking home and consuming at a later date. The chef who teaches the course is extremely knowledgeable about Spanish food & has written several cook books. Her ethos is to use make meals using some sustainably & ethically sourced meat (or fish) and supporting this with a whole selection of delicious vegetable & pulse dishes. This is exactly what we did on the day & i'm sorry that this was a disappointment to you. On a cookery course like this where the focus is on flavour & simple techniques, we tend to use a range of demonstrations & individual & pair work so that people can cook more dishes on the day. I'm sorry if your expectation was that your husband would bring home everything he cooked on the day, this is never our intention. I hope he uses the skills he learnt on the day to cook for you & you enjoy the food that he makes.

Fabulous informative and fun day...

My husband and I attended the culinary confidence day. I ate things I would normally turn my nose up and genuinely enjoyed them (mackerel pate and salmon fillets) I really want to try and eat more oily fish so this was perfect. The soda bread was tasty and easy to make. The day flowed well, learned so much, new skills and techniques for chopping and seasoning. I definitely recommend this to anyone wanting to broaden their cooking techniques.

Fantastic and educational day “Smoking”

My brother wanted a smoking course for his birthday. Personally never something I had considered. Attended Turan Turan’s course on Sunday. Fantastic. I have come away totally enthused and, dare I say it, I may even have a go! My brother who is an experienced smoker and cured a number of things also learnt lots.

Great time fantastic teacher and really great surroundings.

I received a voucher as a birthday present so didnt really know what to expect. I've never attended anything like this before. I did the 1/2 day pasta making course and enjoyed every minute from the welcoming tea and biscuits to eating our productions with a glass of wine in the dining room at the end. The staff were very welcoming and friendly as were the other 7 people on the course. It was a relaxed atmosphere with no pressure to complete tasks and the chef was more than happy to help with further advice and to answer questions. Not only did we learn how to make pasta from scratch, 3 different types, I now chop onions in a completely different way and I know the importance of seasoning after we tried a sauce before and after salt and sugar were added. I am genuinely considering returning for another of the courses. Either buy it for yourself or add to your birthday list. You wont be disappointed.

Great discovery - learnt a lot in a friendly atmosphere from a great tutor

Just attended the "Middle Eastern - Meze and More" course. The tutor was excellent - friendly, clear, with lots of hints and tips about much more than just the headline recipes. There was plenty of space to work, no queueing for oven/fridge etc. Would definitely book another course here.
