Caol Ila distillery is one of Islay’s best kept secrets. Situated on the North West of the Island, your initial approach takes in amazing views over the Sound of Islay and over to the Paps of Jura.

The distillery itself hugs the coastline, the old dunnage warehouse that dates back to 1900 guards the stunning glass fronted still house. This George Leslie Darges styled building houses the six impressive copper stills which stand guard over the Sound of Islay.

Allow some time to take a tour and experience whisky production at its best. Embracing both old and new technologies while utilizing skills going back generations, the distillery produces a well balanced, lightly smoked whisky, punctuated with fruit, spice and a little salt. Complete your visit with a tasting in the atmospheric surroundings of the old cooperage where you can experience some of Caol Ila's world class single malts.

Coal Ila is the largest distillery in volume. But only 15% of that volume is used to make their splendid single malts, the rest is sold for blending to other companies. We did the pairing taste of Whisky and chocolate. Absolutely amazing ! It gives a totally different view on what whisky also can be.

Cail Ila is in a rather big contrast to other distilleries on Islay, huge and industrialized. Unfortunately we could get a tour because there was some work ongoing, but we got a free taste of two expressions and a nice chat with a girl in visitor center.

Caol Ila produces much more than the other distilleries on Isla (though not as much as some of the major mainland whiskies) so it's a different experience. You have to take the Caol Ila distillery whisky tasting and food (cheese and chocolate) pairing tour ! It's super original, very insightful and interesting and changes from all the other distillery tours you'll find on the island.

What a great distillery, whisky and tour is to be had at Caol Ila! Niguel is probably the best distillery tour guide in Scotland. My Atlanta Scotch Club group especially enjoyed the gourmet chocolate paired tasting. Bowmore, Bunnahabhain and Caol Ila (alphabetically) are my favorite Islay tours.

Caol Ila is far and away the biggest producer in Islay and does not have the charm of the other Islay distilleries. Its location, however, is lovely and our guide, Billy, was extremely knowledgeable and informative. Just us on the tour and expertly tailored to our interests by our guide Billy. Fascinating to see a different aspect of distilling in such a fantastic location. Tasting inspired us to buy a bottle to enjoy later!

Caol Ila is one of eight distilleries on Islay and if you're into single malt whisky it will be well worth a visit. Knowledgeable staff that gave of his time to discuss and give out some small samples of their production. Small and not very informative visitor center. But the staff made up for it.
