Located about 30km away from Nagoya city, we reach Hatcho Miso company 45 mins by car. They run an hourly guided tour of a museum and their miso factory. Tour is about 30 mins. The museum has a section describing traditional manufacturing process using life-size mannequin. What was an eye-opener was you can observe rows of gigantic miso barrels with rocks stacked like pyramid on top which are used to ferment miso.

After the tour, you can get 2 free packs of their miso to bring home and also sample miso soups.

They also have a snack shop where you can sample mind boggling variety of miso related paste, sauces, dips and snacks (nuts, crackers, biscuits). There is also miso ice cream for sale at yen300 and restaurants serving food with their hatco miso.

I would have given this place a "very good" rating only if the tour can be conducted in English! It's a pity. Luckily there was one English speaking staff who can do minimal explanation for us. But otherwise worth a visit.

The tour is free, but you have to register yourself at the reception counter inside the souvenir shop. You will find it located on your left once you enter the shop.
You will be given a piece of registration receipt and do keep that with you as you will need it to redeem your free miso samples at the same counter after the tour.
The 30-minute tour is conducted fully in Japanese and you will get to taste some miso soups and snacks after the tour.

One of the two old-fashioned dense organic miso factories. Tour if you understand Japanese or someone who does. There's a tasting at the end of the tour and few samples at the gift shop.

I toured this factory with my daughter and a Japanese colleague who works in Okazaki. The traditional way of making miso in huge wooden vats, weighted with stones is quite interesting and so Japanese. As others have noted, it is best to go with someone who can translate the Japanese for you. recommended

You can take a tour of miso factory for free without making a reservation.
The tour is conducted every half hour.
The first thing you have to do is to go to the reception desk.
An application form will be given to you there and the time of onset is written on it.
You don't have to fill out the form unless you want to receive information from the company.
But don't throw it away because you can get a pack of miso by submitting it after the tour.
You ought to move to patio a couple of minutes before the time.

The tour guide explain about the tour.
Unfortunately the explanation is only spoken in Japanese as far as I know.
What they say is roughly as follows.

• Please take attention to surrounding for fear that you should be hit by a forklift.
• Miso they make is called "Hatcho-miso"
• "Hatcho" means about 872 meter. It means the distance between the company and the castle.
• The president is named as "Kyuemon Hayakawa" for generations.
• Miso is made from steamed soy beans, spending 2years.

You can see a lot of tubs filled with miso.
There're two kinds of bands attached with the tubs.
The one is made of bamboo, the other is made of metal.
Believe it or not, the bamboo one is more durable than the other.
But unfortunately there's no one who can make a bamboo band now.
You will also see piled stones on the tubs.
You may think the stones have been heaped untidily.
But they've been piled up in calculated way, so they have never been collapsed even if earthquakes occurred.
After the tour, you can drink two kinds of miso soup.
Please note, you can't make miso soup by only dissolving miso with hot water.
It needs "Dashi"
You can get "Dashi-no-moto" at a supermarket.

They offer a 30 minute free tour, and you can taste a few kinds of miso at the end. They ask you to fill out a short form and give you a small miso gift when you hand it back to them.
The tour is only offered in Japanese, so if you don’t speak the language you might want to bring a Japanese-speaking friend or a translator.

It's an educative tour on miso, from the beans to fermentation and to food.
However it's all in Japanese and I do g understand a thing. But it's still a good tour to just view the factory and fermentation and storage process.

Makes me appreciates miso more now.

A nice 30 minute tour through the factory. By the end, there's a moment you can taste two kinds of soups and sweet with misso; and get a souvenir (a small packet of misso).
The structure is very old; the smell, great.

Starting with their national cultural heritage building, our guide escorted us to the history of Kakukyu company chronically. Guided tour is only in Japanese. Guided tour begins with pre-registration every 30 minutes between 9:30 to 12:00 in the morning and 13:00 to 16:00 in the afternoon. In the museum part of building one can see not only miso making tools but also ancient Kimono which was wore when the owner brought freshly made miso to load in Okazaki castle. In the end of tour, we had 3 kinds of tasting; haccho-miso soup, Akadashi miso-soup and Konjac with haccho-miso sauce. This visit and tasting takes nearly an hour and it is free of charge. After the visit, we went to their restaurant where we could taste series of haccho-miso meal and Nagoya specialties.
