What is the tipping policy regarding all the " surprises" and services?
At the end of our holiday we took £50 tip to Reception to be shared amongst all the staff as that seemed the fairest way. After all what about the behind the scenes people such as the cook who prepares some of the little treats.
One of the girls asked us to put it in an envelope with a note to Despina(owner) stating it was for the good service etc and why we were so happy.
She said that once a month Despina read out all the notes and shared the tips out.
Thought this was a great way of doing things and nobody got left out and the staff got praise and acknowledgement for their brilliant service.

we tipped similarly to @jesslynch13 - tipped the driver every couple/few trips... and for us, since the same two gals were looking out for us for our stay, we left them each with a larger 'thank you' tip when we checked out!
We ended up tipping randomly. We had the same couple people " looking out for us" so we would tip an occasional 5 to 10 euros. For example, we didn't tip every time time they picked us up with the shuttle but, by the 3 drive we would tip a larger amount. This way we didn't have to constantly have cash on us. I don't know if it was expected but they were all an amazing staff so we were happy to tip.
As with all of Santorini I found there is no real tipping norm it is discretionary unlike the US & UK where in my experience is seems to be expected around the 20% and 10% mark respectively. That said I do not generally give tips in a hotel, except in their restaurants, but the service at the Anastasis was exceptional and delivered from the heart from all the staff, so I was happy to leave a few % on top of the of the bill which I understand the owner Despina distributes to all the staff on a regular basis - hopefully this helps - NB: I have travelled extensively around the world and found the service provided competing with the best I have experienced
