this is the first time my wife and i have done a ryokan onsen in a region of Japan (onezawa) known for wagyu Japanese beef. Amazing meal, excellent service - private japanese style room overlooking the pond, very pleasant onsen. I have been to probably over 50 different ryokan onsen in the last four years... i would recommend for beginners to japanese culture as well as those living in Japan for many years.

also recommend the local sake 地酒 inexpensive and best consumed at room temperature or 常温

I've been to a good couple of dozen Japanese inns in my time, and assuming a budget of about 10,000 yen/head, it doesn't get much better than Kajikaso. This is a classy old ryokan that's been around for ages, but it was given a sensitive facelift in 2007 and now looks like it was built yesterday -- in fully traditional style, with stairways meandering around the central pond and garden. Rooms are traditionally Japanese, meaning very sparsely furnished, but they're spacious and well-heated (a definite bonus in Japanese winters), with great views of the winter wonderland around you. There are two hot spring baths (indoor and outdoor) with a rotation system for men and women, plus a private, reservable one of you and yours, and a dozen in the village around if that's not enough. The food is excellent, beautifully presented Japanese with a couple of Western touches, all from locally sourced ingredients.
