Staying here for a week would be fine. You have everything you need here at this hotel. Do understand though you are practically in the airport. The handy thing is though is that you could get a bus from the airport and get into town that way. Also Swords is not too far from the hotel and there is also a nice pub around the corner too from it.
Make sure you take a trip to Portmarnock, Malahide, Donabate and Howth while you are there - although wrap up warm this time of year.
