The hotel is about an hour and a half drive from the Lisbon Airport. Probably two nights would be sufficient. Evora is a small town. There are many interesting sites in the town and in the surrounding area, but two days is enough time to see everything. If you use Evora as a base for wider explorations, you could plan a longer visit. I am not familiar with the weather in late December but a quick Internet look says 40s at night and 50s during the day. Have a great trip.
