If you are coffee lover and love breakfast, the club option is worth it. I don't recall how many cups of coffee I had there since they were so good. The downstairs lounge for breakfast was excellent including fresh fruits (avoid upstairs-not much choices there). Also nicer hotel room means more comfort after long day of site seeing - pay the extra.
Make sure to have coins for bus fare if you want to save money on taxi or buy bus pass at the airport if you are staying for few days. Also, the express-train from airport was worth the money since the fare includes free bus service to and from hotel.
Food could be cheap if you look around. We ate at pricy restaurants to very cheap local eateries. Some of tours we signed up were very reasonable as well and saw a lot more than if we did it on our own.

I have stayed at several hotels in Hong Kong and I don't think any of them had windows that could be opened. Hong Kong has very high humidity so hotels blast the AC in the rooms, especially during the summers. We usually adjusted our thermostat in the room so that it wouldn't be so cold or turned off the AC for a bit.I do remember one of the hotels asking clientele to leave the AC on so that the steam from the bathroom could evaporate.
