I visit this Onsen fairly regulary. It is my favorite. In summer the smell of the vineyards is sweet intocitation. You can see the stars at night as the lights are kept low. The water is alkaline which is a nice change from the sulferic water at most other onsens. The food is good, the atmosphere inviting and the inner courtyard a joy to relax in front of. I really highly recommend Vinespa.
BTW, their wine is very good too. There are tastings which you should attend.

part onsen ryokan (hot springs inn), part vineyard, this place really is a hidden gem. staff is excellent, food pretty good, and rooms are so clean. outdoor onsen is available throughout the day, but is really beautiful in the evening. the place is pretty small (7-8 rooms?), so it feels intimate but is very modern and clean, so was perfect for someone like me who wanted hotel-amenities in a ryokan setting.
if you ever find yourself in Niigata, would highly recommend this place.
