We found the cooking school through a website called Epitourean or Edible Destinations. Jon and Estella have created a beautiful oasis. Traveled when: Nov 13-19, 2016 Accommodations: The Casita room at Casa Carmelita Casa Carmelita is a private place to go to. I made this trip during the Day of the Dead festivities. The accommodations, classes and food were fantastic. The best Mole is the beat I have ever had.
