I spend a few weeks out of the year in Hanksville for work. The whispering Sands is a great value. Rooms are always clean and modern and the owner is more than accommodating. One of my favourite places to stay.
This is no five star Hyatt Regency, but you need to remember you're in Hanksville, Utah, this is not the end of the civilized world but you're pretty darn close.

As you now know, Slick Rock Grill will be closed when you plan to visit. They were the one that definitely served beer. However, if the weather is good, you could pick up a six pack at Hollow Mountain next to Blondies and likely eat on the patio and drink the beer. Blondies has been a must stop every time I go through.
