We ordered the Asian chicken salad, Alaskan scallop salad and glazed chicken wings. They all tasted amazing, especially the chicken wings. The staff were very friendly as well.

Had a great butter pumpkin soup followed by scallops. Both very good. The restaurant is situated on the second floor at Hyatt Regency, and have a nice view towards the downtown area.

Mosaic Grille is just your average Bar in the downtown area. There's not much atmosphere when I visited .. only another table and another person at the Bar. The Food Menu was ok.. nothing really stands out. It was a slow Sunday afternoon and not much was going on. I had a beer and left ... there was nothing else... More

We had not long got booked into the hotel after a long international flight and just wanted easy service, nice place to sit with a view. This restaurant was perfect, service was excellent, food quality, superb and peaceful. I stayed at the Hyatt Regency Vancouver for a conference -- the business plan came with the buffet breakfast at the Mosaic Grille. It was a very good buffet with a wide range of choices. This is not the place to have a martini, they serve you in a regular sized martini glass and the cocktail fills the lower 1/3 of the glass. The volume appears to be 1 oz. not what you expect for a $17.00 martini. Appetizers at the bar was good not memorable.

My wife and I and some friends stopped in for a late (mid-afternoon) lunch on a Saturday. The restaurant wasn't too busy and we were seated promptly. The restaurant has a very open, airy feel. ....the food didn't have the flair promised by the menu. We loved the views of Burrard St., and the quiet pleasant ambiance. The service was perfect. But, the reinvented sandwiches we tried were disappointing, especially the Reuben. It was a pleasant evening, convenient, and a better experience than most hotel restaurants. Came in for breakfast and the restaurant wasn't busy. Seems to be a lot of staff running around. Took 5 mins to be greeted at the door another 7 to have a server come over. Asked if I wanted water 3 times, never did bring it. The food looks good, but the service took way too long.

I have been to the Mosaic Grille on the 2nd floor of the Hyatt Hotel several times with friends. It is a higher end restaurant with a menu of many choices. The service and food is always very good.
