I’ve never had a better dining experience in my life. From arrival to the end of the meal, every employee treats you like the most important person in their life, while at the same time giving you the space to just enjoy a fabulous meal....I did the 7 course tasting menu and bought drinks a la carte. Knowing what I know now, I would have done the wine pairing on top of it because the sommelier, Callum McCann, is top notch. My wife was in London for work, so this was a side trip with a solo meal for me. As I was alone, I spent my time observing the interactions between the staff and the other diners. I found myself listening to Callum’s descriptions of each of the beverages he recommended and served as if it was a beloved member of his family. We’ve all taken wine tours and heard the same old spiels from the vintners, but Callum makes you feel invested in the bottle you’re drinking. I ordered a couple Pinots, then switched to a Ribera del Duero and that’s when I personally got to hear the tale about how that winemaker almost single-handedly revived that region’s winemaking. Ok, now the meal…insane. Head chef Mathew Sherry blew my mind. I’m no food expert, so bear with me. Each dish lead seamlessly into the next, while the menu documented how they carefully honored some of Scotland’s best food producers. We started with three amuse bouche - of which I missed the description, but I can tell you that one had truffle, the next caviar, and the last pistachio. —> Divine bites that truly announced the meal’s arrival. Next was the homemade sourdough bread with Orkney butter. The bread was crunchy and soft and flavorful. The butter was almost too beautiful to eat, but I had no regrets cutting into it after I tasted it. The salmon was the first bite of the tasting menu and it blew me away. Smokey and fresh, Campbell and Sons from the Shetland Islands really outdid themselves by delivering such fresh fish. The fish was followed by the Denhead Farms asparagus which were so perfectly smooth and crunchy. Next up was the Henderson’s Butchers sweetbread. In my mind the whole time I was imagining a zombie saying “braaaaaians!”. This was my first experience eating sweetbread but I was so blown away by the previous bites that I knew Chef Sherry wouldn’t let me down - I dived right in, and I was not disappointed. Smooth and flavorful, I’d eat them any time. Campbell and Sons provided the scallops for the next dish to the restaurant. The hand dived scallops tasted like the salty sweet Scottish ocean waters that kiss the shores. Thankfully, the scallop was huge and didn’t disappear in one bite, because I wanted to savor every bit of it. The scallops could only be followed by a 45-day dry-aged steak from Warwick Farms. At this point, I decided I didn’t have room for the cheese plate add-on because I was getting full and canceled my previous request to add it on. I knew dessert was coming so I asked Callum over to talk to me about Scotches. I love Scotch, but rather than go to some known choices, I asked for a recommendation. Callum asked me if I like tea or coffee, I said tea. With or without milk, I said without. Then sugar or not. I said not. He recommended a Scotch called Bladnoch that was distilled in his home town. It was absolutely perfect to accompany the upcoming desserts. After the steak was the first of two desserts. The Balmoral honey comes from the apiary at the top of the building and was a sweet surprise after the perfectly salted steak. The meal (supposedly) ended on the next dessert which was a strawberry bomb, with berries provided by Leadketty Farm. It was strawberry infused with strawberry on strawberry. Quite possible the best dish of the night. I thought I was done, but then a cart came around with about 10 different sweets to choose from. Caramel, chocolates, and other mini bites of magic were there to be chosen. I was full but was nudged into trying three that sounded intriguing. I didn’t get pictures, and I totally regret it, but you’ll just have to find out for yourself! Do yourself a favor and go to this can’t miss location near the Waverley train station in Edinburgh.More

This is one of those fine dining experience which you would expect everything to be at least close to perfect.. and one would deduct points for any issues they see/remember, especially when it's called "Number One"... To be honest, I was a bit sceptical when...I made the reservation, but for us.. it was indeed so good we enjoyed all the way through.... Again, this was a Monday dinner and if you have read my other reviews posted this week, I have mentioned that many fine dining/high end restaurants in Edinburgh/Scotland are closed on Sun/Mon. Maybe "Number One" located in a hotel premise, was an exception. Only a tasting menu was offered but they are very accommodative of any dietary restrictions/requirements. As I do not take beef, my main was replaced by an Aged acquerello risotto with black truffle. What impressed me with the detail was that we all had individual menus and mine also had the replaced course printed. This does not take a lot of effort but it's the heart and attention to subtle details that matters. The scallop and roe deer was cooked just the way it should be... not over-cooked at all, especially for the seafood. Overall the menu is more of a traditional/old school style rather than fusion, which I still enjoy. We had a nice 2013 Meo-Camuzet burgundy that blended well with the courses overall. A very versatile light pinot that went well with the seafood/pasta/meat. Overall, the food quality was at its acclaimed high level and surely did the service. I may not rate this as my #1 dinner or restaurant in this trip (as they have named themselves) but it is definitely amongst the top!More

Simply exquisite. One of the best taster menus we have ever had with surprise, delight and attention to detail. This delightful food is then paired with a service next to none, what a fab front of house team and sommelier who had so much passion...for the wines she was presenting. A return visit to No. 1 Restaurant within the Balmoral Hotel and yet another delightful experience. Emma and her team work so hard to ensure that guests have only the best service. Keith makes all guests feel so special upon arrival and is so attentive...through the evening. Mathew Sherry and his team create the most amazing and imaginative food using such wonderful ingredients - each dish so complex but easy on the palate. ‘Oohs’ and ‘Aahs’ flow with each mouthful!! Every member of the Team should have a personal mention but Alex looked after our table last night and was super. An incredibly fine Dining experience so suggest you sample it for yourselves!More

Such a comfortable, relaxing restaurant and the staff are friendly. Every year we celebrate my birthday and Emma, the manager, and her team, always make it special. It’s so nice not to have to specify dietary requirements as they keep a note of this. The...food is amazing. We had the Tasting Menu with the Prestige wines. Number One continues to provide some of the most exciting and delicious food available anywhere. The welcome we receive from the staff here makes the experience extra special. Emma and Keith oversee the evening with warmth, humour and quiet confidence keen to ensure the experience...matches people's expectations and is paced just right for each table. We appreciated the options available for the cheese board now and felt the trolley with the sweeties to finish properly highlighted these little treasures. I now look forward to seeing what flavour the fruit pastel is going to be each visit! The meal was terrific and we loved every mouthful, the scallop, sweetbread and duck were just amazing. The kitchen team here are so talented and consistent. Lastly we met a new Italian sommelier who really sparkled all evening! What a great addition to this team. The food was amazing and the one who deserves a great shoutout is the Italian wine sommelier who made seriously excellent recommendations of the wine with the courses. The flavors were made extraordinary because of the wine. Definitely worthy of the Michelin Star or 4AA...Rosettes as they call it :)More

We our dinner at Number One. The tasting menu was superb. Looked and tasted amazing. Service very friendly and friendly the surroundings are very tasteful. Perfect for a special occasion. Or just because!

10 stars!! 5 doesn’t do it justice! Number One was extraordinary!!! The staff was lovely and worked in sync with each other. The evening was flawless and felt like a beautiful dance happening before our eyes! It was a ballet of food. Exquisitely executed and...flavors to die for! Each course left you satisfied and wanting more! We had the three course option. I don’t know how one could eat seven courses! There are complimentary appetizers that burst with delight in your mouth. The bread was warm and the butter was a great compliment. The main course was the Shetland Salmon. We savored every bite! Next came the dessert. I chose the toffee soufflé and my husband chose the Blacketyside cherry pistachio one. Scrumptious beyond words. We ended with complimentary mini desserts! Delectable!! This restuarant is by far the best restuarant I have ever eaten in. Wish it were closer to home!! It would be a special occasion favorite if it were! The chef, thank you! Thank you for an amazing evening. Our last night at the Balmoral was truly special because of your delicious, artful creation!!!More

No 1 has not lost its edge for being a place for graceful dining, with its well spaced out tables and super courteous staff. Eating at the weekend there is a fixed tasting-style menu and this was excellent in its variety, presentation and taste. The...usual additional extra delicacies are still provided pre- and post- meal. The wine list is extensive and well managed. We had an enjoyable time for a special occasion. It remains a favourite for me in Edinburgh.More

My wife and I came on holiday from Utah to Edinburgh and stayed at the Hilton Carlton. Being lovers of fine dining we decided to try Number One at the Balmoral Hotel. The sommelier will help, they have an extensive wine menu but not online. Send an email if you want one beforehand. The paired wine selection is fab at £80 each for intro and £130 each for prestige wines.

I would advise contacting the hotel. The restaurant only operates in the evening so may not answer in day time
