I kept it simple, and went for my favorites: Salmon Sashimi and a California roll; excellent taste and presentation. Came with friend the night before at 9pm, couldn't find a table and were turned away, booked next morning for one at 7.30 for one, unnecessary as i was alone and as it's opening time, place was not full at all... I like both shrimp and Asian cuisines and found both while staying at the Hilton Double Tree Fontana Park. Like much of the hotel, Bonsai has a color scheme of shades of black and fuchsia to celebrate Japanese culture. I am not a big fan of restaurants at hotels. But is was January 1st and almost everything was closed. So we decided to visit Bonsai. That was a very good decision. Smiling and friendly staff. The waiter had knowledge about sushi. Just take a look at the pictures. It looks great and it tasted great.

Extremely well-prepared sushi with fresh and tastefull ingredients. The sushi was perfect in structure and looks. Educated and very serviceminded staff. Both menus and a la carte.

We chose this restaurant which was in our hotel as it was our last night and we had to get up early in the morning! I'm not too sure whether the other reviewers had a different chef and wait staff, but this was pretty bad. I'm currently staying at the hotel and my friend and I decided we wanted some sushi. I didn't have the energy to go and seek out a sushi bar tonight so opted for the Japanese restaurant at my hotel, the Bonsai at the DoubleTree Hilton (Fontana Park).
