The chef generally uses a carving fork and knife to serve. Many times on the TV even chefs have a tenancy to use hands, fingers to adjust something on the plate or test if cooked (such as steak level of rareness for example).
I would not worry about such things.
Worse if he was cleaning the floor or visiting the bathroom without washing.
It has not put me off, nor affected adversely in any way post-event.
But can see why it could offend though, personally do not worry.
