My wife and I have come to Shibumi on three separate occasions in the past year. I'm from Canada and so whenever we are visiting Ecuador I make a trip to Shibumi for it's excellent sushi, ambiance and wonderful staff. What an amazing place. The owner is a sushi artist ... don't order off the menu just sit at the sushi bar and let him feed you.

Seems legit, very original and intimate. The chef told us he had actually studied with a Japanese guy and his sushi was very different from what we are used to in Ecuador (which is by far the best sushi I've ever tasted) - this made me a little skeptical but it wasn't bad at all. My husband and I could not have been happier with our experience. We took the below advice and ordered by the chef's selection (omakasi), and this well exceeded our expectations. His sushi is a masterpiece and our tastebuds agreed!

Seems like it was a very off day for the chef.. Decided on the Omakasi menu as the waiter told us that was the absolute best. We had a lovely sushi dinner, selected by Junior, the owner and chef. The sushi was of the highest quality, with an Ecuadorian flair. Junior learned his craft in Denmark where he lived for 13 years. Amazing restaurant. It is small. The food is excellent. Junior, the chef, it is a great chef. Always full. It is better to book in advance. I enjoyed the sashimis. The rolls are great too. I really recommend it if you are visiting Quito.
